Do you pick them small for canning? We just pick our banana peppers as we need them, and some turn orange and red with no adverse effect. They get bigger too.
Two of our plants are true banana peppers, and four more are some sort of sweet pepper for "dipping" according to the plant marker. They're sweet, like banana peppers, so we're blending them into Italian pickled pepper jars.

Two banana pepper plants, and four that were labeled "dipping" peppers, sweet. They have exactly the same flavor raw as a banana pepper, and they're the kind you would drag through ranch dressing on a platter. We're making jars of pickled Italian peppers out of them.
I'm so impressed with how productive those plants are! I bought four different chili seedlings, and I'm picking a few from each plant here and there. One is a pepperoncini, and I finally had enough to make a jar of pickles. I also have a few serranos I started from seed that are starting to fruit.
I buy established plants from a local Co-op and they always over produce. Nothing I’ve started as seeds has ever done as well other then green beans.
